Hi there! How’s your Tuesday going? Ready for the holiday? Well if you are up in the air on what side salads you need to serve up at your barbecue or picnic…I have a little list of some very interesting and delicious salads! Maybe one or two of them just might catch your eye and your taste buds! Take a peek and by the way…they are delish all year round : )

I made this 2 weeks ago and I have to tell you it was fabulous! If you haven’t experienced a Panzanella Salad before…please try it…that addition of crusty bread as it soaks up all the salad goodness is over the top!!! Great way to use up stale bread too!

Well Kale is in season and very plentiful! It is a veg that is PACKED with vitamins…this is a very easy and tasty way to serve it up and get rave reviews!

I love the little touch of capers in this salad…tiny little bursts of flavor! I will also give you a little tip here — when recipes call for mayo — I use 1/2 the mayo and replace the other 1/2 with a good rich Greek Yogurt! So much less fat and calories and a wonderful touch of tang!

Caprese Salad with Balsamic Glaze
A simple but elegant presentation that will make your family and guests oh so happy! An EZ PZ recipe for the Balsamic Glaze just puts it over the top…this one is my personal recipe : )

Ok…this looks like it should be served at a formal dinner and that it can be as you see here…but the combination of flavors is so incredibly bright…it is perfect for Summer Time fare! Low in calories…absolutely gorgeous…fresh as a morning breeze…what more can one want : ) Hope you try this!

Here is a delightful idea…just place this gorgeous platter out on the table (I would add some artichoke hearts and some grilled zucchini…well you get the picture) set the bowl of basil vinaigrette along side it and let everyone dig in! Add a cheese platter and crusty bread and forget about cooking…take a out a fresh platter of fruit for dessert and you will never break a sweat…just sayin! : )

MMMMM…another great potato salad…one that uses fresh herbs…a great way to use all those herbs in your chalkboard rimmed hand made herb pots!!! Snip some fresh Tarragon and Dill and I would sneak a bit of fresh Parsley in there also! This is Fun! Fresh and YUMMY!!!!

This is something a little different that features a very under used veggie…radishes! Did you know they are delicious just eaten with a bit of butter and salt…a great healthy treat! This salad is sure to be a treat for of those willing to try something new…also makes a great companion to a bowl of yummy soup…a perfect lunch!

You probably thought I would end with a traditional salad…but I thought to myself…you all have your family favorites…I like showing you something a little different (I hope : ) Also corn is IN SEASON…and so scrumptious right now…this salad could NOT be easier nor could it be more flavorful! 3 FRESH ingredients and then your dressing and you have an AMAZING salad that people will rave about. The hardest part is cutting the corn off the cob…this could not be easier and it is simple and delicious. Give it a try and if you want to add a little bit of finely chopped red peppers for color…that would be fun!
My wish is that you found something that you are dying to try! Something that you might not have seen or thought of before. I try to pick out culinary treats that are happy and healthy and of course vegetarian! Hope you have fun with a few of these!
