Damn you IHOP and those addictive Cinn-A-Stacks Pancakes!!!!! They totally got me hooked and yall know how I am when I get hooked on something. If not, take a look here. Oh and here. You get the point. I HAVE to learn how to make it at home or either go broke. I’ve learned to just roll with my addictions until they play themselves out.
My little one woke up this morning asking for these pancakes. Well… actually…I kinda suggested it several times and told him a story about when I was little and got terribly sick from eating Apple Jacks. Finally he said, “ok mommy I want cinnamon roll pancakes instead”. Sobeing the loving mother that I am, I strolled into the kitchen to whip mehim up a plate of homemade cinnamon roll pancakes.
Recreating Ihops Cinna Stacks Pancake recipe was super simple: a basic pancake topped with cinnamon roll filling and cream cheese glaze. I basically just snagged it from my favorite cinnamon roll recipe and voila!!! You really can’t go wrong with it. I’ve used several cinnamon spreads and glazes trying to find the best one and they pretty much taste the same to me.
This is definitely a recipe fit for a special holiday breakfast or brunch or the morning after when you want to make him/her fall in love again, hey I’m just saying.
Before attempting this recipe take a little time to plan and set out all of your ingredients. The pancakes and cinnamon spread needs to be hot at the same time. I usually make the cream cheese glaze first, then the pancakes, and when I’m on my last batch of pancakes I’ll do the cinnamon spread. If the cinnamon spread is left for too long it will start to get gritty. So this is definitely a serve immediately breakfast.
You can use any basic pancake recipe you’d like. I’ve included a simple one, if you need one.

Serves: Makes about 6 pancakes
Ingredients
- Basic Pancakes:
- 1 cup all-purpose flour
- 1 Tablespoon baking powder
- 1 heaping Tablespoon sugar
- 1/2 teaspoon salt
- 1 egg, slightly beaten
- 1 cup milk
- 2 Tablespoon butter, melted
- Cinnamon Spread
- 1/4 cup butter
- 1/4 cup brown sugar, packed
- 1 heaping Tablespoon cinnamon
- 1 Tablespoon half n half (may need more)
- 1 Tablespoon all-purpose flour (may need more)
- drop of vanilla extract (optional)
- Simple Cream Cheese Glaze
- 1 ounce cream cheese, softened
- 1 Tablespoon powdered sugar (may need more)
- Milk (to thin it out if desire)
Instructions
- Pancakes
- In a large bowl, sift together flour, baking powder, sugar, and salt. Set aside.
- In a small bowl beat together egg, milk and butter.
- Make a well in the center of the flour mixture and pour the egg mixture into the well.
- Stir gently just until incorporated. It should still be lumpy.
- Let batter rest for 10 to 15 minutes.
- Simple Cream Cheese Glaze
- In a small bowl, mix together cream cheese and powdered sugar until creamy. Add milk if desired until it reaches a glaze consistency.

Thanks for the recipe, I made these this morning and they were delicious!!!! The cinnamon spread for this recipe is the bomb, I woke up wanting to taste “Cinnabons” and ended up making this amazing can-do “Diva” pancake recipe.
I substituted a little bit of whole milk because I did not have half and half or any other creamer and it still came out perfect! Also to a short cut and used a complete pancake mix but I added a half of a banana and some vanilla and cinnamon to the pancake mix.Nikki —Reply

LOOK AT VIDEO, SHE MELTED BUTTER, PUT BROWN SUGAR STIRRED IT THEN ADDED THE CINNAMON AND STIRRED, IT LOOKS A BIT CLUMPY BUT THEN SHE ADDED THE TABLESPOON OF HALF & HALF OR CREAM AND IT SMOOTHED OUT. LAST ADD THE FLOUR AND MAKE SURE TO COOK FEW MINUTES TO TAKE OUT THE RAW FLOUR TASTE
